Let’s Do a Vindaloo – Slowcooker Recipe

I’m a person who can’t live without curry – so with this Auckland June shaping up to be a colder-than-average one, it’s time to fill up on curry!

Ingredients:

Beef – 1kg Gravy Beef, cubed
Lemon Juice – 2 Tablespoons
Ginger – 2cm grated

Spices – 1 teaspoon each of:
– ground turmeric
– ground cumin
– hot chilli powder
– ground black pepper
– garam masala
– ground cinnamon

1 Cup Water
1/3 cup cider vinegar
1 brown onion, chopped
2 garlic cloves, crushed or thinly sliced
1 tablespoon oil
2 tomatoes, chopped
2 green chillies, sliced

I put a dollop of yoghurt on the top of mine too – that’s optional 🙂

Method:

Marinate the Beef and refrigerate for an hour (or overnight if you’re super dooper organized, but no big deal if you can’t)

Heat oil in a frying pan

Add the onion, stir for a few minutes until it’s nice & soft

Add beef, brown

Turn your slow cooker to high to warm it up

Add 1 cup water, cider vinegar, tomatoes & chilli to the slow cooker

Add the beef & onion

Cook on Low for 8-10 hours then High for 30 minutes

Serve with Rice (or a Cauliflower Rice)
