Super Quick, Super Easy: Chilli Prawn Salad

Hello hello!

It was a bit of an afterthought to take photos of today’s lunch, as I eat this sort of thing quite a bit!  I’m doing a low-carb, high protein, low-fat diet at the moment, so this is a good example of what you end up eating.

 

INGREDIENTS:

  • 200g Prawns/Shrimp
  • 1 Garlic Clove, crushed
  • 1/2 Tbsp Soy Sauce
  • Salad Leaves (I also had some bean sprouts)
  • Roasted Red Peppers – Diced
  • 1/4 Red Onion – Diced
  • Jalapeño Peppers
  • Red Chilli Paste
  • Dressing of your choice – I used Aoli

 

METHOD

In a very hot pan or a grill, fry the Prawns in Garlic & Soy Sauce until cooked (took only a few minutes for me)

In the meantime, contruct your salad with the rest of your ingredients!  Finish with chilli paste & dressing of choice.  As you can see, I like chilli…a lot…
