Savoury Muffins – Cheese, Corn & Bacon

This makes 12 standard-size muffins or about 30 mini muffins


2 Rashers of Bacon (or ham if you don’t have any bacon)

2 Cups Standard Flour

5 teasonpoons Baking Powder

300g Can of Creamed Corn

2 eggs

1 Cup of Milk

2 Cups Grated Cheese


Pop the oven onto 180ºC  (360ºF)

Heat some oil in a pan, fry bacon, drain & chop into little bits

Grab your seive, sift flour & baking powder into a bowl.

Make a well in the middle of the flour mixture.

Now mix the corn, eggs, bacon and milk together then pour into the flour.

Add half the cheese and quickly mix until just combined.

Grease your muffin tins and spoon the muffin mix in (fill each one 3/4)

Bake at 180ºC  (360ºF) for about 20 minutes – Check by touching one of them, it will spring back when lightly touched.  It will take less time for mini muffins.
