This is a meal I used to make myself a bit when I was on a low-carb diet.
Ingredients:
500g Beef Sirloin or rump
3 Garlic Cloves, Crushed,
3cm Grated Ginger
Spring Onions/Shallots
4 Courgettes, Sliced
2 Tbsp Black Bean Sauce
1 Tbsp Soy Sauce
1 tsp Sesame Oil
Juice of 1 Lime
(Sesame Seeds to garnish if you have some)
Method
In a hot pan, fry up your garlic & ginger in some olive oil, then add your diced Spring Onions.
After a minute or so, add your beef. Once it’s mostly browned, add the black bean sauce, soy sauce, sesame oil and lime juice.
You can either add the thinly-sliced courgettes (zucchini) at this point, or as I did, fry up seperately in some more garlic.
